This is an easy, old-fashioned, refrigerator pickled carrots recipe. After preparing, simply let the carrots marinate for 5 to 7 days to let the flavors reach peak flavor.
Enjoy these carrots on sandwiches, in salads, or just snack on them right out of the jar!
Picked Carrots Recipe
1 pound carrots
2 cups white distilled vinegar
2 cups water
2/3 cup sugar
2 teaspoons whole mixed spices
1 teaspoon salt
1/4 teaspoon black pepper
Wash and scrape carrots. Cut into sticks or slices.
Simmer in lightly salted water until almost tender. About 5 minutes depending on thickness of sticks or slices. Drain.
Put carrots into a sterilized quart jar.
Combine vinegar, water, sugar, spices, salt and pepper. Bring to a boil and boil for 2 minutes.
Pour vinegar mixture over carrots in jar. Seal. Let cool on counter.
Refrigerate for 5 to 7 days before eating.
