These delicious blueberry turnovers are made with a walnut pastry. These turnovers are easy to prepare and can be frozen to bake individually.
Blueberry Walnut Turnovers
1 1/2 cups flour
1/2 cup shortening
1/4 cup finely diced walnuts
2 tsp. lemon zest, or 3/4 tsp. dried lemon rind
1/2 tsp. salt
4 – 6 Tbsp. cold water
1 Tbsp. white or apple cider vinegar
1 1/2 cup fresh or frozen blueberries
24 white sugar cubes
2 to 3 Tbsp. white sugar
Mix flour, shortening, walnuts, lemon rind, and salt.
Mix water and vinegar.
Add the water-vinegar combination to the flour mixture to form a dough.
Roll out the pastry on a lightly floured board to make a rectangle measuring 12 by 18 inches.
Cut 24 3-inch squares. Brush lightly with water.
Place a few blueberries on each square.
Add one sugar cube on top of the blueberries.
Fold squares corner to corner and seal edges to make triangle turnovers.
Lightly brush each turnover with water.
Sprinkle sugar on each turnover.
Bake in a preheated, 400 degree F. oven for 15 to 20 minutes or until lightly browned.
Serve hot or cold.
Unbaked turnovers can be frozen and baked later.
Makes 24 turnovers.
