Hamburgers are a healthy food that have been falsely maligned for being high in fat and cholesterol.
If eaten in moderation, hamburgers made from 85 to 90 percent lean ground beef are a good source of protein, iron, and vitamin B-12. One four-ounce cooked hamburger patty contains 30 grams of protein. Protein helps build lean muscles and energy. Iron carries oxygen throughout the body. Vitamin B-12 helps to produce healthy red blood cells.
One of the most interesting combinations, and yet simple to prepare, is this prize-winning ground beef dish made with dried apricots.
This recipe can be prepared 2 ways. Baked or fried.
Hamburger with Apricots
1 pound hamburger
1/2 cup chopped dried apricots
1/4 cup minced onion
1 teaspoon salt
1/2 teaspoon black pepper
Soak dried apricots in cold water for 30 minutes to an hour. Drain off water.
Mix hamburger, softened apricots, onion, salt, and pepper.
If baked: Place mixture into a small, lightly oiled casserole dish.
Bake at 375 degrees F. for 35 to 40 minutes.
If fried: Form into 4 patties and pan fry 3 to 4 minutes on each side.
Serves 4.
