Potato water that results from boiling potatoes is usually just poured down the drain. It is much better to use it for other dishes. The potassium level of potato water is high from the potassium leached out of the potato. Other nutrients include Vitamins A, B, C, and flavonoids. At the very least, save it for the compost pile.
For those needing to avoid gluten, potato water is the perfect alternative to flour, or cornstarch, when thickening gravy and sauces. Add the hot potato water to pan drippings with desired seasonings.
Potato water can be used in bread instead of milk. It adds more flavor than milk or water, and the bread will be moist and soft.
When preparing soups, potato water adds more flavor and slightly thickens the soup without the need for adding flour, cornstarch, or other thickeners.
Flavor potato water with salt, pepper, onion powder, garlic powder, or other favorite spices and herbs for a healthy beverage.
Some people report that washing hands with potato water after chopping or mincing garlic rids the hands of the garlic odor.
