The secret to light and fluffy omelets is as easy as adding baking soda. There are several other tips to make delicious, scrambled eggs but this tip is one of the best.

To make fluffy, soft, melt-in-your-mouth scrambled eggs simply add half a teaspoon of baking soda to 3 beaten eggs before pouring into the skillet or maker. Add milk or cream, salt and/or pepper, or any other favorite combination. Then scramble as usual.

Air pockets are created in eggs by the baking soda reacting with the acidity of the eggs.

Do not add more than the one-half teaspoon for every 3 eggs or the final dish will have an unwanted bitter taste.
