Potato Salad with Yogurt Dressing

For anyone looking for a low-fat potato salad here is an excellent recipe for a yogurt dressing for potato salad.  A small amount of healthy olive oil is the only fat in the recipe if non-fat yogurt is used.

2 cups peeled, cubed, potatoes
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced red onion

Yogurt Dressing

1 cup plain yogurt
2 Tbsp lemon juice
2 Tbsp olive oil
1 Tbsp white vinegar
1 Tbsp mustard
2 tsp honey
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
Pepper to taste

Bring water to a boil.  Add cubed potatoes.  Bring water back to a boil and boil potatoes until fork tender.  Drain and leave in colander to let all water drain off while potatoes cool.

Dice vegetables while potatoes boil.

In a separate bowl combine dressing ingredients.

Transfer cooled potatoes to salad bowl with diced vegetables.

Add salad dressing and toss to evenly coat all vegetables.

Place in refrigerator for at least 3 hours, or overnight, before serving.

Add bacon bits if desired at serving time.
