Chicken Soup Mexican

This is an extremely easy to make chicken rice soup that has a taste reminiscent of Spanish Rice.

1 lb. chicken breast, cubed
5 cups chicken broth
1 14-oz can stewed tomatoes
1 cup brown rice
1 green pepper, chopped
1/2 tsp cumin powder
1/2 tsp garlic powder
1 tsp salt
1/8 tsp black pepper

Simmer rice in chicken broth with cumin, garlic powder, salt, and pepper for 20 minutes.

Add chicken, green pepper, and tomatoes. Simmer for another 20 minutes until rice is tender.

Four servings.
