Tomato Soup is the one soup that is commonly enjoyed at all times of the year as compared to other soups which are preferred in the wintertime.
The first tomato soup recipe was published in 1832, and since then, an abundance of tomato soup recipes have been created and printed in cookbooks, magazines, and newspapers.
In America, tomato soup and a grilled cheese sandwich are as traditional as mom’s apple pie.
This recipe is delicious with crackers or toast.
Easy Roasted Tomato Basil Soup
1 lb. fresh tomatoes, cored and quartered
3 cloves garlic
4 Tbsp. olive oil, divided
1/2 tsp. salt
1/4 tsp. black pepper
1 small yellow onion, chopped
2 c. chicken broth
1/4 tsp. crushed red pepper flakes
1/2 cup packed basil leaves, chopped. Save a few for garnish.
Preheat oven to 450 degrees F.
Combine tomatoes, garlic and 3 Tbsp of olive oil. Spread on a large baking sheet. Sprinkle with salt and pepper. Roast 20 to 25 minutes or until tomatoes are very soft.
In a large saucepan, saute the onion until soft in the remaining 1 Tbsp olive oil.
Add tomato mixture, chicken broth, red pepper flakes and chopped basil leaves. Add more pepper and salt to taste. Simmer for 20 minutes.
Serve with a couple of basil leaves for garnish.
