Recipe Tip of the Day
Soups are easy and quick to make for a lunch or simple dinner.
This broccoli soup is full of delicious vegetables and herbs for a healthy dish.
Simply add bread or croutons and a shaving of cheese on top for a hearty, complete meal.
Hearty Broccoli Soup
1/2 cup chopped onion
2 tablespoons butter, cubed
2 cups chicken broth
1 1/2 cups water
2 cups chopped fresh broccoli
1/2 cup chopped celery
1/2 cup chopped carrots
1 tablespoon minced fresh parsley
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup milk
3 tablespoons all-purpose flour
In a large soup pot saute onion in butter until tender.
Add water, chicken broth, vegetables and seasonings. Simmer 10 to 15 minutes until crisp-tender.
In a small bowl, stir flour with a small amount of milk to form a smooth paste. Pour remaining milk into the paste and add to the soup.
Bring to a boil; cook and stir for 1 minute or until thickened.
If soup is too thick, add a small amount of water until desired consistency is achieved.
Garnish with a sprig of parsley if desired.
