Egyptian onions, also known as tree onions, and walking onions, are very prolific. They grow a regular onion bulb, but they also produce small onion bulblets at the top of the plant, which eventually fall over and start a new plant as they “walk” across the garden.

These bulblets can be harvested as small onion bulbs and used in any recipe. They are especially delicious as pickled onions.
Easy Pickled Onions
1 cup onion bulblets (about 1/2-inch wide)
1/2 cup white vinegar
3 Tbsp granulated sugar
1/2 to 1 tsp salt
Peel and trim ends of bulblets but leave whole.
In medium saucepan combine bulblets, vinegar, sugar, and salt.
Bring to a rolling boil. Boil for one minute uncovered.
Pour into a wide-mouthed canning jar. Cover and cool.
Refrigerate for 7 days. Will keep for up to a month refrigerated.
Makes one cup.
