Baking Tip of the Day
Substitutes for high-fat whipped cream are easy to make. These are excellent for those preferring to eliminate high calories, high cholesterol, or have allergies.
Whip 1/2 cup low-fat milk powder and 1/2 cup ice water. When soft peaks form, add 2 tablespoons of lemon juice. Continue to whip until very stiff peaks are formed. Stir in 1/4 cup sugar and one teaspoon of vanilla.
Add 1 tablespoon of lemon juice into 1 1/2 cups of chilled evaporated milk. Beat until stiff peaks form.
Whip 3/4 cup of milk with 1/3 cup room-temperature butter until desired stiffness.
Whip one cup milk with 2 tablespoons cornstarch. Add 1 tablespoon flour. Add 2 tablespoons sugar and 1 teaspoon vanilla if desired.
A very unusual substitute is to mash a very ripe banana with one egg white to desired stiffness. Add sugar if desired.
