When preparing zucchini for breads and muffins recipes require shredded zucchini.

Leave the skin on since most of the nutrients are in the peel.

The easiest way to shred zucchini is to use the medium sized holes on a hand box grater. A medium 6- to 8-inch long zucchini should produce about 1 cup of shredded zucchini.

The shredded zucchini can be placed in a covered container and stored in the refrigerator for 3 to 5 days.
