Recipe Tip of the Day
These lemon maple biscuits can be served as a dessert after a full course meal, a brunch, or an afternoon coffee break. The sugar cubes produce a crusty topping as they bake. For a variation, orange juice can be substituted for the lemon juice.
Lemon Biscuits
2 cups flour
1/4 cup shortening
3 teaspoons baking powder
1 teaspoon salt
Lemon rind grated from one lemon
1/2 to 3/4 cup cold milk
1/2 cup lemon juice
20 to 24 sugar cubes
Vegetable oil
Mix flour, baking powder, and salt.
Cut in shortening.
Mix in lemon rind.
Stir in milk to make a soft dough.
Roll dough to a thickness of 1/2 inch thick.
Using a biscuit cutter, cut dough into as many rounds.
Place biscuits into greased baking pan.
Soak sugar cube in lemon juice for a few seconds. When saturated place one sugar cube on top of each biscuit round and gently press onto the round so it stays in place.
Brush biscuits with vegetable oil.
Bake at 450 F for 12 to 15 minutes until golden.
Maple Glaze
1/2 cup powdered sugar
1 Tbsp plus 1/4 tsp milk
1/2 tsp maple extract
2 to 3 Tbsp minced walnuts (optional)
Mix powdered sugar, milk, and extract until well mixed. Stir in walnuts if desired.
