Great as a sandwich spread, a relish for roast beef, fried chicken, cheese sandwiches, a cream cheese dip and more!
This is also a great recipe for preserving any excess jalapenos at the end of summer harvest.
Sweet Jalapeno Relish
1 lb. jalapeños, diced
1 1/3 cups Apple cider vinegar
1 3/4 cups sugar
3 Tbsp.maple syrup
2 Tbsp. cup brown sugar
2 Tbsp. cup molasses
1/4 tsp. cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. allspice
1/4 tsp. ground cardamom
1/4 tsp. ground cloves
1 tsp vanilla
1 star anise
Combine all ingredients except the jalapenos in saucepan.
Bring liquid up to a boil and turn down to low.
Add diced jalapeños and simmer on low for 10 minutes.
Remove from heat.
Remove jalapeños with slotted spoon and bring liquid back to boil for 5 minutes.
Put jalapeños in jars, then top with liquid.
Let cool and refrigerate.
Makes 1 pint plus a little extra.
Note: This recipe can be duplicated and water bath canned. Process for 10 minutes for pints. Adjust time for elevation.
