White cakes are usually vanilla flavored or bland with hardly any taste. Here are some tips on how to enhance the flavor of white cakes to a new level of distinction.
To keep the basic vanilla flavor of a white cake add 1/2 to 1 teaspoon of vanilla extract to any white cake box mix. This will refresh the dried vanilla flavoring of the mix.
Add a teaspoon of lemon or lime zest, juice, or extract.
Many varied flavors can be achieved by trying any baking extract. Almond, peppermint, coconut, are just a few favorites. Add 2 teaspoons of the extract to the cake batter. For distinctive, one-of-a-kind flavors try combinations of 2 or more extracts such as chocolate and orange.
Like extracts, dry gelatin can be used for cake flavorings. Add one 3-ounce box to one package of cake mix. For moisture balance, add a bit of extra water, or one egg, to compensate for the additional dry gelatin. Save a bit of the gelatin crystals to sprinkle on the finished cake.
Adding a small box of pudding mix will produce a denser, moister, cake.
