Whipped cream toppings need to be thick, soft, and creamy. Here are some tips to ensure that whipped cream dollops stay firm and don’t fall flat when served.

All these methods produce whipped cream that should keep well for 3 to 4 days when refrigerated.

Adding 1 tablespoon of powdered sugar to 1 cup of whipping cream will produce a whipped cream that can be made in the morning and served for an evening dinner.

Another method is to add 1 tablespoon of nonfat powdered milk to 1 cup of whipping cream.

Meringue powder can be used as a stabilizer. Add 1 tablespoon to 1 cup of whipping cream.

Cream of tartar is an old favorite used by professional bakers. Add 1/8 teaspoon to 1 cup of whipping cream.

Dissolve 1 teaspoon of unflavored gelatin in 4 teaspoons hot water for every cup of whipping cream. When the cream reaches the soft peak stage, stir in 1 or 2 tablespoons of the whipped cream into the cool but still liquid gelatin. Mix well. Then, stir the mixture into the whipped cream.

Marshmallows or marshmallow crème works very well, and the resulting whipped cream will keep for several days in the refrigerator.
