These jalapeno shortbread cookies are a delicious savory cookie that are quick and easy to make for a summer picnic, party, tea, or just for eating as a snack. Delicious with coffee, tea, or other favorite beverage.
Jalapeno Shortbread Cookies
Note: Jalapeno seeds can be removed or included depending on how much heat is desired in the baked cookie.
2 1/2 cups flour
1 cup butter
1 cup grated cheddar cheese
1/2 cup sugar
1/2 cup minced fresh jalapeno
2 Tbsp to 1/4 cup milk
Preheat oven to 350 F.
Cream butter and sugar until well blended.
Stir in flour until mixture is evenly blended.
Stir in grated cheddar cheese and minced jalapeno peppers and mix well.
Starting with 2 Tbsp milk mix until dough holds together.
Divide dough into 3 portions. Roll each portion of dough into an 8 inch long roll.
Chill in refrigerator for at least 2 hours.
Slice off 16 one-half inch slices from each log.
Place cookies on a non-stick cookie sheet.
Bake for 12 minutes.
Makes 48 cookies.
