Easy Strawberry Jalapeno Tart Recipe

Jalapenos are delicious in desserts.  Jalapenos are usually associated with salsa, tacos, tamales, and other highly spiced dishes.  This delicious easy-to-make recipe produces individual tarts.

When starting to make this recipe, save a strawberry to garnish each tart.

Whipped cream, or other whipped topping, creates the final flourish to these festive, summer tarts.

Strawberry Jalapeno Tarts

Note:  Purchased pie pastry can be used instead of this homemade pastry if desired.

Pastry:

2 cups all-purpose flour
2/3 cup shortening
6 to 8 Tbsp water
1 Tbsp vinegar
1 tsp salt

Sift flour and salt together.

Cut in shortening until pieces are the size of peas.

Mix vinegar and water.

Add 6 tablespoons of the vinegar-water combination to the flour mixture and blend until pastry can be rolled.  If necessary, add more water until pastry holds together and can be rolled.

Cut rolled pastry into circles of dough and place in greased tart pans.

Filling:

2 cups chopped strawberries
2 to 3 Tbsp diced jalapeño
1/2 cup white granulated sugar

Combine chopped strawberries, diced jalapenos, and sugar in a small saucepan over medium heat.

Cook until sugar melts completely.  Cook gently for about 15 until the mixture is like jam.

Remove from heat and cool for a few minutes.

Fill pastry shells about two-thirds full.

Bake at 400 F. for 12 to 17 minutes or until golden.

Serve with a dollop of whipped cream or topping.  Top with a whole strawberry.

Makes 9 to 12 tarts depending on size of tart pans.
