Keeping Cheese Mold-free

Cooking Tip of the Day

Cheese will not become moldy if the cheese is stored properly.  Refrigeration is not enough.  Cheese needs extra protection.

If cheese is going to be used within a short time, placing the cheese in a sealed plastic bag, a glass container, or wrapped tightly in plastic wrap is sufficient.

Use fresh wrapping every time the cheese is removed and returned to the refrigerator.

Wrap cheese in plastic wrap, wax paper, cheese paper, or parchment paper and keep in the vegetable crisper, the coldest area in the refrigerator.  Double wrapping with wax paper or parchment paper is the preferred choice.  For additional protection, some chefs add a layer of aluminum foil around the outside.

An old-time practice is to lightly dampen a paper towel with vinegar.  Wrap the cheese in the towel and place into a plastic bag or glass container. Vinegar prevents mold from forming on the cheese.

Another old-fashioned secret is to place a few sugar cubes in the container with the wrapped cheese.

One last tip to keep cheese fresh is to add a light layer of extra-virgin olive oil, vegetable oil, or a bit of butter to the cheese, then wrap and store.
