Vanilla is called the “Queen of flavors” for good reason.  It is a favorite flavor of people worldwide.  Vanilla improves and enhances almost any food that it is added to.

Add one or more teaspoons of vanilla to batters, custards, doughs, and pie crusts.  Cookies, brownies, cakes, and some muffins would have less flavor without vanilla.

Vanilla extract, or vanilla beans, are the favorite form of vanilla to use for most purposes.  If using vanilla oil, use one-fourth the amount recommended in the recipe as a substitute for pure vanilla extract.  Imitation vanilla is made from wood pulp, has a weaker flavor, and can make foods taste bitter.

Vanilla extract should be stored in the cupboard while vanilla oil needs to be refrigerated.  Pure vanilla extract will turn cloudy in the cool temperature of a refrigerator.

When brewing coffee add two tablespoons of vanilla extract to the empty pot.  The coffee will have the flavor of vanilla without the high calories of vanilla syrup.

Vanilla is a secret ingredient used by professional chefs in many foods besides desserts and other sweet foodstuffs.  Vanilla brings out the sweetness of foods and calms the acidity in foods.  Many chefs add vanilla to tomato sauces, seafood, and beef stews.

If too much vanilla extract is added during preparation, a small amount of lemon juice or lemon zest can be added to offset what would be a bitter taste to the dish.
