Recipe For Healthy Potato Soup

Soups are quick, easy, and delicious dishes to make for lunch or dinner.

Here is a recipe that even beginning cooks can make with confidence.

Add bread, crackers, salad, or sandwich for a filling meal.

 

Healthy Potato Soup

2 tablespoons olive oil

3/4 cup finely chopped onion

2 cups peeled and diced potatoes

1 ½ cups chicken broth

3/4 teaspoon dried dill weed

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 ¾ cups milk

1 tablespoon dried parsley, or to taste

 

Cook and stir onion in olive oil until lightly browned, about 10 minutes.

Add potatoes, chicken broth, dill weed, salt, and pepper and bring to a boil.

Reduce heat and simmer for about 30 minutes until potatoes are tender and chicken broth is reduced.

Stir milk into potato mixture; bring to a boil.

Remove from heat and garnish with parsley.

Makes 4 – 6 servings.
